STUFFED MUSHROOMS 1/2 lb. (12 large) mushrooms 3 Tbsp. butter, melted 1/2 Tbsp. minced onion 1 1/2 Tbsp. flour grated cheese few grains nutmeg 1/2 tsp. finely chopped parsley salt and pepper bread crumbs Wash mushrooms, twist stems out. Chop fine. Add mushroom stems to melted butter and minced onions. Cook 10 minutes. Add flour, grated cheese, nutmeg, parsley, salt and pepper. Mix; heat through. Let cool. Fill mushroom caps, rounding top. Sprinkle with bread crumbs. Bake 15 minutes at 425 degrees. Variation: Add 1/4 pound sauteed chopped Italian sausage added to filling.
