1 pkg. unflavored gelatin
1/4 c. cold water
16 oz. can crushed pineapple
1 c. sugar
juice from 1 lemon
1 c. shredded Cheddar cheese
1 c. heavy cream, whipped
Dissolve gelatin in water. In a saucepan, heat can of
pineapple and sugar until sugar dissolves. Add gelatin mixture
and lemon juice. Remove from heat. Cool in refrigerator until
it starts to set. Add cheese and whipped cream. Refrigerate
until ready to serve. Makes 6 to 8 servings.
