1 (3 oz.) pkg. lime or lemon
1/2 c. boiling water
1 (8 1/4 oz.) can crushed
1/2 c. Miracle Whip salad
3/4 c. whipping cream
1 large avocado, peeled,
halved, pitted and diced
2 Tbsp. lemon juice
Stir boiling water into gelatin until dissolved. Drain
the pineapple, reserving liquid. Add enough water to equal 1
cup liquid. Stir liquid and the Miracle Whip into gelatin
mixture. Chill in refrigerator just until the consistency of
unbeaten egg whites. Beat whipping cream until soft peaks
form. Fold whipping cream, diced avocado, lemon juice and
pineapple into the chilled gelatin mixture. Transfer to an 8 x
4 x 2-inch loaf pan; cover and chill in refrigerator until
firm. Unmold onto a lettuce-lined serving dish. Slice to
serve. Makes 6 servings.
