1 (No. 2) can crushed
pineapple, drained (reserve
for topping)
2 c. boiling water
2 (3 oz.) pkg. lemon Jell-O
1 or 2 c. cold water
2 to 3 bananas, cubed
1/2 c. miniature marshmallows

1 egg
2 Tbsp. flour
1/2 c. sugar
1/2 pt. whipping cream or 1 c.
Cool Whip
1 c. pineapple juice

Mix boiling water with Jell-O. Stir until dissolved.
Add cold water and stir. Drain pineapple, reserving liquid.
Add pineapple, bananas and marshmallows. Chill until firm.
Mix pineapple juice, egg, sugar and flour in saucepan.
Cook over low heat until thick. Cool. Fold cream or Cool Whip
into cooked mixture. Spread on top of Jell-O mixture. Sprin-
kle nuts and/or chopped cherries, if desired, on top. Makes 8
to 12 servings.
