CUCUMBER AND PINEAPPLE SALAD|
1 pkg. (3 oz.) lemon gelatin
1 1/2 c. boiling water
1/2 c. canned pineapple juice
2 Tbsp. vinegar
1/2 tsp. salt
1/2 tsp. onion juice
1 c. diced cucumber
1 c. canned pineapple, diced
1/2 c. mayonnaise
Dissolve gelatin in boiling water. Add pineapple juice,
vinegar, salt and onion juice. Chill. When slightly thick-
ened, fold in cucumber, pineapple and mayonnaise. Turn into a
mold. Chill until firm. Unmold on lettuce. Garnish with
additional mayonnaise. Makes 8 servings.
