LARGE ANGEL FOOD (Mom Smart's) 1 1/2 c. plus 3 Tbsp. sifted cake flour 3/4 c. sifted granulated sugar 1 7/8 c. egg whites (13 eggs) 1/2 tsp. salt 1 5/8 tsp. cream of tartar 1 1/2 c. sifted granulated sugar 1 tsp. vanilla 1/4 tsp. almond extract Sift flour and 3/4 cup sugar together four times. Beat egg whites and salt until foamy; sprinkle in cream of tartar and beat until the eggs stand in peaks, but are still moist and glossy. Add remaining 1 1/2 cups of sugar in four additions over egg whites and beat 25 strokes each time; add flavorings and beat 10 more strokes or turns. Add flour to sugar mixture in four additions, folding in each time with wire whisk or spoon. Use 15 fold over strokes each time and last thing 10 more strokes or turns. Put dough into tube pan. Bake at 350 degrees for 45 minutes. Let cake hang for an hour until cool.
