GUMDROP CUPCAKES The children at Tiny Tots make these cupcakes as part of the May Day Festivities. 1 lb. large gumdrops (no black ones), cut up 1/2 c. honey 1/2 c. soft butter 1 egg 3/4 c. sweet applesauce 1/2 tsp. soda dissolved in 1 Tbsp. hot water 1 tsp. baking powder 2 c. flour 1 c. raisins Cream butter and honey. Add 1 cup flour, egg, baking soda, baking powder, applesauce and seasonings. Sift remaining cup of flour over raisins and cut up gumdrops. Mix lightly to coat each piece. Add to creamed mixture. Spoon into cupcake holders in muffin tins; fill each holder just 1/2 to 3/4 full with batter.
