PUMPKIN MUFFINS ...a Halloween favorite... peel, boil and drain pumpkin to make 1 c. 2 1/4 c. plus 2 1/2 tsp. flour 3/4 Tbsp. baking powder 1/2 tsp. salt 1/2 tsp. each cinnamon, ginger and nutmeg Sift the dry ingredients together and then add 1 1/4 cups minute 1 tablespoon honey. Cut in 1/2 cup minus 1/2 teaspoon shortening. Dissolve 1 teaspoon baking soda in 3/4 cup milk. Beat 2 eggs. Add milk mixture to 2 eggs and then add 1 cup of peeled and boiled pumpkin. Raisins may also be added. Let the children add the raisins, honey and beaten eggs. Gently combine flour and pumpkin mixtures; spoon into paper cupcake holders inserted into muffin tins. Fill each holder 2/3 full of batter. Bake 20 minutes at 375 degrees.
