DATE-NUT BALLS

1/2 c. brown sugar
2 beaten eggs
1 Tbsp. margarine
1 1/2 c. pitted dates
1 tsp. vanilla
2 c. rice cereal
1/2 c. chopped nuts
coconut (optional)

Mix sugar, eggs, margarine and dates in a saucepan over
low heat for about 10 minutes, until the dates are crushed and
the mixture pulls away from the pan. Remove from heat. Add
vanilla. Combine the cereal and nuts in a bowl. Pour in the
date mixture and let cool for about 5 minutes. Roll the
mixture into balls about 1 inch in diameter (butter fingers if
necessary). Roll the balls in coconut, if desired. Store in
an airtight container in the refrigerator. Makes about 24
date-nut balls.
