LIGHT CAROB MUFFINS

1/2 c. mashed banana
3 Tbsp. vegetable oil
1 large egg
1 c. orange juice
1/4 Tbsp. vanilla
1 1/2 c. flour
1/4 c. carob powder
1 tsp. baking soda
2 tsp. baking powder
1/2 c. flaked coconut

Topping:
1/2 pt. heavy cream
1/2 tsp. vanilla extract
3 Tbsp. carob powder

Beat together mashed banana, oil and egg until creamy.
Add juice and vanilla extract and beat. Measure in the flour,
1/4 cup carob powder, baking soda and baking powder. Beat well
and stir in flaked coconut. Pour batter into oiled and floured
muffin tins. Bake at 350 degrees for 15 minutes or until firm to
touch.
Topping: Beat topping ingredients together in a small
bowl just until fluffy. Spread over muffins and serve. Makes
12.
