NAVAJO FRY BREAD

about 2 c. flour
1/2 c. instant nonfat dry milk
1 Tbsp. baking powder
1/2 tsp. salt
2 Tbsp. lard or solid
shortening
3/4 c. water
salad oil

In a bowl, stir together 2 cups of the flour, dry milk,
baking powder and salt. With your fingers, crumble in lard
until mixture is like cornmeal. Add water, stir with a fork
until dough clings together. Turn out onto a floured board and
knead until smooth and satiny (about 5 minutes).
Divide dough into 6 portions. Shape each into a ball.
On a floured board, press out one ball to 6 to 7-inch round.
Deep-fry in hot oil at least 3-inches deep in electric skillet
until golden brown. Turn over so each side will brown.
