ERIN'S SUNDAY MORNING PANCAKES

1 egg
1 c. milk
2 Tbsp. oil
1 c. flour (1/2 c. whole wheat
and 1/2 c. white is good)
1 Tbsp. sugar
1 tsp. baking powder
1/2 tsp. soda
1/2 tsp. salt or a shake or
two

Beat the egg. Add remaining ingredients in order
listed. Beat by hand. Grease and heat skillet or griddle.
It's hot enough when water sprinkled on it skitters around.
Use 1/4 cup measuring cup to pour batter onto griddle. Turn
pancakes when they are full of bubbles but before the bubbles
pop. Makes 10 (4-inch) pancakes.
