PEANUT BRITTLE

3 c. raw peanuts
3 c. sugar
1 c. white syrup
1/2 c. water
1 Tbsp. water
2 tsp. butter
2 tsp. soda
1 tsp. salt
candy thermometer

Cook sugar, syrup and water until it spins a thread.
Add peanuts; cook until 290 degrees to 295 degrees. Add butter; remove from
heat. Add soda and salt. Stir good until golden brown. Pour
on a buttered cookie sheet to cool. Shake it down. Be careful
when adding soda and salt. It will puff up.
