1/3 c. shortening
1/2 c. smooth peanut butter
2 eggs
1 tsp. vanilla
1 c. sifted self-rising flour
1 c. shredded coconut
confectioners sugar

Heat oven to 350 degrees and grease an 8-inch square cake pan.
Blend together shortening, peanut butter, sugar, eggs and
vanilla. Stir in flour and fold in coconut. Place in prepared
pan and bake 30 minutes. While still warm, cut and roll each
square in sifted confectioners sugar. Delicious with milk!
