ROCK CANDY

1 3/4 c. sugar
1/2 c. water
1/2 c. light corn syrup
dash of salt
food coloring
3/4 tsp. flavoring oil
powdered sugar
candy thermometer

In small saucepan, combine sugar, water, corn syrup and
salt; bring to a boil. At 250 degrees add food coloring. At 285 degrees to
300 degrees remove from heat and let cool a few minutes. Add flavor-
ing oil and cover for 5 minutes. Pour on buttered slab. When
cool enough to touch, cut into squares. Dust with powdered
sugar when cool.
Red (cherry) and green (wintergreen) go especially nice
at Christmas.
