C. W.'S PINEAPPLE UPSIDE-DOWN CAKE|
1 pkg. Duncan Hines pineapple
1/4 stick margarine
1 lb. light brown sugar
12 slices pineapple
1 small can crushed pineapple
3 large eggs
Grease a 9 x 13-inch pan with 1/4 stick margarine; cover
bottom with 7/8 pound brown sugar and spread evenly. In a
medium bowl put cake mix, small can crushed pineapple, eggs,
rest of brown sugar and juice from sliced pineapple; mix well.
Place sliced pineapple in pan over brown sugar; pour over the
cake mixture and bake 45 minutes at 350 degrees. Turn over on serving
plate and serve. Serves 12.
