PINEAPPLE UPSIDE-DOWN CAKE

1/2 c. butter
2 c. packed brown sugar
1 (15 1/2 oz.) can pineapple
chunks
maraschino cherries, drained
yellow cake batter

Preheat oven at 375 degrees before making cake batter. Prepare
topping. In a 13 x 9-inch baking pan melt butter. Sprinkle
brown sugar; mixture should be placed in pan. Place pan in
oven until butter melts. Sprinkle brown sugar over butter.
Drain pineapple chunks and place them in the pan on top of the
brown sugar. Place a cherry in the center of each slice of
pineapple. Prepare cake batter; pour into cake pan and bake 35
to 40 minutes until toothpick inserted comes out clean. Loosen
cake from the sides and flip out on to platter.
