CHEDDAR CHOWDER

2 c. boiling water
2 c. diced potatoes
1/2 c. sliced carrots
1/2 c. chopped onion
2 c. (8 oz.) shredded Cracker
Barrel brand sharp Cheddar
cheese
1 c. cubed ham
1 tsp. salt
1/4 tsp. pepper
1/4 c. margarine
1/4 c. flour
2 c. milk

Add water to potatoes, carrots, celery, onion, salt and
pepper. Cover; simmer 20 minutes. Do not drain. Make white
sauce with margarine, flour and milk. Add cheese, stir until
melted. Add ham and undrained vegetables. Heat, do not boil.
Makes 6 to 8 servings.
Note: Omit ham, add 8 slices crisp crumbled bacon or
omit ham, add 2 cups cream style corn.
