HAMBURGER SOUP 1 lb. ground beef 1 c. chopped onion 1/2 c. chopped celery 1 Tbsp. butter 3 c. tomatoes 2 beef bouillon cubes 1/3 c. regular uncooked rice 1 tsp. salt 1/2 tsp. chili powder 1 bay leaf 3 1/2 c. water 1/2 c. diced raw potatoes (optional) 1/2 c. diced carrots (optional) 1/2 c. mixed frozen vegetables, any mixture (optional) Saute beef, onion and celery in melted butter until meat is browned. Stir in remaining ingredients (including any or all of the optional vegetables). Bring to a boil. Reduce heat, cover and simmer for 20 minutes or until added vegetables are tender. Remove bay leaf. Makes 2 quarts of delicious hearty soup.
