CREAM OF BROCCOLI SOUP 1 c. water 1 bunch broccoli or 1 (10 oz.) pkg. frozen broccoli* 2 Tbsp. butter 2 Tbsp. flour 2 c. half and half cream 2/3 c. onion (if desired) 2 c. chicken broth 1 c. Cheddar cheese Cook broccoli in 1 cup water until tender. Drain, reserving the liquid. Mix 2 tablespoons butter and onions and saute 4 minutes (don't brown). Blend in 2 tablespoons flour and 2 cups chicken broth and cook over medium heat until thick. Add broccoli, the reserved liquid and 2 cups half and half cream, salt and pepper to taste. Turn on low heat, add 1 cup grated cheese. Do not boil, but stir until cheese is melted. *Cauliflower or spinach may be used in place of brocco- li.
