RICE SALAD

2 c. uncooked rice
12 Tbsp. salad oil
6 Tbsp. white vinegar
2 tsp. salt
pepper to taste
8 tsp. tarragon
1 c. chopped green pepper
1/2 c. chopped red pepper
1/2 c. chopped parsley
1/2 c. chopped green onion
2 c. green peas
1 cucumber, chopped
12 cherry tomatoes

Cook rice and then add salad oil, white vinegar, salt,
pepper and tarragon while hot. Add green pepper, red pepper,
parsley, green onion and peas together. Cook a few minutes and
then add to rice while hot (peas should be firm). Just before
serving add cucumber and cherry tomatoes (cut in half). Very
good to serve at a luncheon with French bread.
