(Serves 15 to 18)
2 boxes lemon jello
2 c. boiling water
2 c. 7-Up, Upper Ten or ginger
1 lb. 2 oz. can crushed
2 c. miniature marshmallows
2 large bananas, sliced fine
1 c. pineapple juice
1 egg, slightly beaten
1 c. white sugar
2 Tbsp. flour
2 Tbsp. butter
1 (4 oz.) pkg. cream cheese
1/2 pt. whipping cream or
1/2 c. chopped nuts
1/2 c. coconut
Dissolve lemon jello in boiling water. When this gets
cool add 7-Up, Upper Ten or ginger ale, crushed pineapple,
marshmallows and bananas (lemon juice will keep them from
turning). Add this to jello when it starts to thicken. Cook
pineapple juice, egg, white sugar and flour slow over low heat.
After it boils, add butter, cream cheese and whipping cream or
Dream Whip. Whip cream until stiff, mix cream cheese and add
to boiling mixture. Pour over gelatin mixture that is set.
Mix nuts and coconut and spread over top of everything.
