1/2 c. sugar (scant)
1 (No. 2) can pineapple rings
grated rind and juice of 1
1 Tbsp. flour
1 egg
grated cheese
lettuce leaves

Drain pineapple rings, reserving juice. Place rings on
lettuce leaves. Mix sugar, flour and egg. Add reserved
pineapple juice and the juice and grated rind of the lemon.
Stir over low heat until thick. Cool and spoon on pineapple
rings. Top with grated cheese.
