SPINACH DRESSING bacon chips (about 1/4 lb.), fried 1/4 c. water 1/4 c. vinegar 2 Tbsp. sugar 1 Tbsp. cornstarch salt and pepper 1 beaten egg Save drippings from bacon chips. Heat and add water, vinegar, sugar, cornstarch, salt and pepper. Cook about 2 minutes and stir in egg. Cook until blended. On washed and drained spinach, sprinkle bacon; add cooked sauce. Tomato wedges and boiled eggs may be added to spinach.
