CORN SALAD

2 c. fresh corn, cut off cob
1 medium red onion (1/2 c.)
1/2 c. diced green bell pepper
1 Tbsp. parsley, chopped fine
1/4 c. beef broth
2 Tbsp. red wine vinegar
1/2 c. mayonnaise
salt and pepper to taste
1 tomato, peeled and diced
4 slices cooked bacon,
crumbled
chopped green onion
1/4 c. sour cream

In large bowl mix corn, red onion, bell pepper and
parsley. In small bowl whisk sour cream and broth; add
vinegar and blend. Work in mayonnaise. Beat until light and
frothy. Toss cream mixture, salt and pepper with vegetables.
Mix. Chill. Garnish with tomato, bacon and green onion.
Makes 8 big servings.
