CREAM OF POTATO SOUP|
1 Tbsp. plus 1 tsp. butter
2 Tbsp. all-purpose flour
2 c. milk
1 c. diced, cooked potatoes
1/4 to 1/2 tsp. salt
pepper to taste
Melt butter in saucepan over low heat. Add flour,
stirring until smooth. Cook 1 minute, stirring constantly.
Gradually add milk; cook over medium heat until thick and
bubbly, stirring constantly. Stir in potatoes, salt and
pepper. Cook 5 minutes or until heated. Yield: 2 1/2 cups.
