OLD FASHIONED CHICKEN SOUP

1 large chicken
5 stalks celery
1/2 bunch parsley, snipped
1 large yellow onion
6 carrots
1 Tbsp. salt

Clean chicken and wash vegetables. Fill a large pot
with 3 quarts water. Add salt, chicken and vegetables (leave
onion whole with brown skin. Make a large X shaped slit with
knife.) Bring to boil. Simmer for 2 1/2 to 3 hours. Strain.
Refrigerate overnight to remove any fat from top.
