BROCCOLI CREAM SOUP|
1 (10 oz.) pkg. frozen chopped
1/2 c. chopped onions
1 can condensed chicken broth
(10 3/4 oz.)
2 Tbsp. butter
2 Tbsp. flour
2 c. half and half
1 tsp. salt
1/2 tsp. basil, finely
1/8 tsp. white pepper
Combine broccoli, onions and broth. Heat to boiling and
simmer 5 minutes. Turn all or 1/2 into blender and blend
smooth. Melt butter and blend in flour (or make thick white
sauce, 5 tablespoons flour, 5 tablespoons margarine and 2 cups
milk). Stir in broccoli mixture, half and half, salt, basil
and pepper. Heat slowly just to boiling. Simmer 1 minute,
stirring. Top each serving with sprinkled sliced almonds.
