FRESH CORN SALAD

8 ears fresh corn
1/2 c. salad oil
1/4 c. cider vinegar
1 Tbsp. fresh lemon juice
3 Tbsp. chopped fresh parsley
2 tsp. salt
1 tsp. sugar
1 Tbsp. chopped fresh basil or
1/2 tsp. dried basil
1/4 tsp. cayenne
2 tomatoes, peeled and chopped
1/2 c. chopped bell pepper
1/2 c. steamed fresh green
peas
3 scallions, chopped

Cook corn, cool, cut off cob. In large bowl, mix oil,
vinegar, lemon juice, parsley, salt, sugar, basil and cayenne.
Mix corn, tomatoes, peppers, peas and scallions. Pour dressing
over this and chill several hours.
This dressing is good over fresh vegetables from the
garden, like squash, cucumbers, bell peppers, onions, tomatoes
and cauliflower.
