TOMATO BASIL SALAD

6 Tbsp. vegetable oil
2 Tbsp. wine vinegar
2 Tbsp. chopped fresh basil or
2 tsp. dried basil
1/2 tsp. salt
1/8 tsp. pepper
3 large ripe tomatoes

In a small bowl, combine oil, vinegar, basil, salt and
pepper. Set aside. (Note: Corn oil can be used instead of
vegetable oil.) In a shallow dish, alternate tomato slices with
basil dressing. Cover with plastic wrap. Chill at least 4
hours. Serves 4 to 6 servings.
