BROCCOLI SOUP

1 large head broccoli
1/2 c. butter
1 medium onion, chopped
1/2 c. flour
2 c. milk
1 c. grated Cheddar cheese
2 cans chicken broth
salt and pepper

Cook broccoli until tender. Saute onion in butter.
Stir in flour and cook 5 minutes. Add milk slowly and stir
constantly. Mix in cheese. Puree stalks of broccoli in
blender. Add broccoli and chicken broth and simmer about 15
minutes.
