CREAM OF BROCCOLI SOUP|
1 box frozen broccoli
3 c. potatoes, shredded
1/2 c. carrots, shredded
1/2 c. celery, chopped
1/4 c. onion, chopped
1 c. water
1 tsp. parsley flakes
1 chicken bouillon cube
1/2 tsp. salt
dash of pepper
1 1/2 c. milk
2 Tbsp. flour
8 oz. cheese spread (Cheez
Cook broccoli and drain; set aside. In large saucepan
combine potatoes, water, celery, carrots, onion, parsley,
bouillon cube and seasonings. Mix, cover and simmer 20 minutes
or until vegetables are tender. Gradually add milk to flour
mixture, mixing well. Add milk mixture to vegetables. Cook
until thickened. Add cooked broccoli and cheese. Stir until
melted. You may also use fresh broccoli.
