1 lb. hot Italian sausage
1 Tbsp. olive oil
1 c. diced onions
1 clove finely minced garlic
1 c. sliced carrots
1 tsp. crumbled basil
2 small sliced zucchini
1 lb. Italian pear tomatoes
2 (10 3/4 oz.) cans beef
2 c. finely shredded cabbage
1 tsp. salt
1/4 tsp. pepper
1 lb. Great Northern beans,
chopped fresh parsley
Slice sausage crosswise about 1/2-inch thick and brown
in oil. Add onion, garlic, carrots and basil, then cook for 5
minutes. Add zucchini, tomato with liquid, bouillon, cabbage,
salt and pepper. Bring to a boil. Reduce heat and simmer
covered for one hour. Add beans with liquid. Cook another 20
minutes. Garnish with parsley. Put Parmesan cheese on top
when serving if desired.
