CUCUMBER SALAD - GURKENSALAT
2 large cucumbers
1 small onion
1 Tbsp. salt
3 Tbsp. vegetable oil
2 Tbsp. vinegar
1/2 tsp. black pepper
2 tsp. sugar
Peel cucumbers and onions. Slice very thin. Place in a
bowl and mix in the salt. Let stand for one hour or more.
Drain liquid off. Combine the remaining ingredients and pour
over top. Mix and serve. Serves 4.
For variation substitute oil with 1 cup thick sour cream
