FLORIDA BUTTERMILK SALAD 1 large can unsweetened, crushed pineapple and juice (20 oz.) 1 large pkg. lime Jell-O (6 oz.) 2 c. low-fat buttermilk 1 small 9 oz. Cool Whip 1/2 c. sliced pecans for topping (optional) Other flavors of Jell-O may be used or 1/2 cup of thick cream instead of the Cool Whip. Stir and heat on medium to just dissolve the Jell-O in the pineapple. Cool. Then add 2 cups buttermilk. Place in refrigerator for 30 minutes to thicken slightly. Fold in all of Cool Whip gently. Pour into a square or oblong dish to congeal.
