POLYNESIAN CHICKEN SALAD|
2 c. cooked chicken, diced
1 1/2 c. diced celery
1 1/2 c. diced canned
pineapple or white seedless
1/4 c. shredded carrots
1/2 c. toasted almond halves
1/2 c. mayonnaise
1/4 c. sour cream
1 tsp. curry powder
1 tsp. lemon juice
1/2 tsp. salt
Combine chicken, celery, pineapple or grapes, carrots
and almonds. Blend mayonnaise with sour cream and seasonings;
pour over chicken and toss lightly. Chill thoroughly, arrange
on greens and garnish with minced parsley. Makes 6 servings.
