CHUNKY VEGETABLE SOUP 3 medium potatoes 1 onion 3 each: carrots and celery stalks 1 medium zucchini 1/2 small cabbage 1 small can stewed tomatoes with juice 1 small can lima beans, green beans or corn 1 qt. low-salt V-8 juice 1 c. vegetable broth (from steaming vegetables) garlic powder, basil and ground pepper to taste Chop vegetables into bite-size pieces. Steam the potatoes, onion, carrots and celery about 15 minutes; add zucchini and cabbage and continue steaming for 5 minutes. Place vegetables in a stock-pot with the vegetable broth. Add canned ingredients, V-8 juice and seasonings. Simmer for about 30 minutes. Serve with a few sprinkles of Parmesan or Romano cheese. Optional: Pasta shells or elbow macaroni in place of potatoes.
