POTATO BEAN CREAM SOUP 5 potatoes, peel and dice 1 medium onion, peel and dice 3 qt. cold water 1/2 pt. sour cream 1 large can or 2 (1 lb.) cans pork and beans 1 Tbsp. (heaping) flour salt and pepper to taste Mix sour cream and flour in a bowl; set aside. Put potatoes and onion into pot with water. Simmer until potatoes and onion are tender, about 30 minutes. Add small amount of soup to the sour cream mixture. Mix well. Add more soup, mix well. Do this until about 2 cups of soup are in the sour cream mixture. Pour all the sour cream mixture to the pot of soup, mixing continuously. Add pork and beans. Bring to boil. Add salt and pepper. Enjoy! Note: Room temperature sour cream will help not to curdle in the hot soup.
