CREAMY VEGETABLE SOUP|
1/4 c. butter
1/2 c. flour
1 1/2 qt. chicken stock
1/2 c. sliced broccoli
1/2 c. sliced celery
1 c. diced Cheddar cheese
1/2 c. sliced onion
1 1/2 qt. milk
1/3 c. minced carrots
1/2 c. sliced cauliflower
dash of paprika
salt and pepper to taste
Melt butter in large saucepan. Add onion, cook until
transparent but not brown. Blend in flour. Gradually stir in
milk, chicken stock, paprika and vegetables. Gently cook until
vegetables are tender and mixture thickens, stirring often.
Season to taste. Add cheese. Do not stir. Serve immediately.
Very good and nutritious.
