1/2 (3 oz.) pkg. lemon
1 Tbsp. lemon juice
1/2 c. finely shredded cabbage
1/2 c. finely diced celery
1 Tbsp. finely chopped pimento
3 sweet pickles, chopped
1/2 tsp. salt
Prepare 1/2 package of gelatin according to package
directions, reducing amount of liquid to half also. Stir in
lemon juice. Chill until slightly thickened. Add remaining
ingredients. Spoon into 2 individual molds. Chill until firm.
Serve on lettuce, top with mayonnaise. Makes 2 servings.
