JELLIED WALDORF SALAD

1 1/2 c. boiling water
2 (3 oz.) pkg. lemon-flavored
gelatin
1/2 c. light or dark raisins
1/2 c. grated raw carrots
1/2 c. diced, unpared red
apples
1/2 c. chopped walnuts
1 tsp. salt
salad greens
mayonnaise or cooked salad
dressing

Pour boiling water over gelatin in medium bowl, stir to
dissolve gelatin. Add 1 1/2 cups cold water. Set bowl in pan
of ice, stirring occasionally until mixture is consistency of
unbeaten egg white, about 30 minutes. Let raisins stand in
boiling water 10 minutes. Drain. Stir raisins, carrots,
apple, walnuts and salt into gelatin mixture. Pour in 5 1/2
cup ring mold. Refrigerate 1 hour. Unmold and surround with
salad greens. Serve with mayonnaise.
