PEANUT SOUP 1/4 c. butter 1 c. minced celery 1/2 c. minced scallion 2 Tbsp. flour 2 c. chicken stock 3/4 c. smooth peanut butter 1 1/2 c. light cream Melt butter. Add celery and scallion. Saute until transparent. Add flour to mixture. Blend well. Gradually add broth. Bring to a boil. Blend in peanut butter. Simmer 15 minutes. Add cream just before serving. Serves six.
