SUMMER RICE SALAD Dressing: 1/2 c. olive oil 3 Tbsp. red wine vinegar 1/4 c. minced onions 1/2 tsp. celery salt 1/4 tsp. fennel seed 1 tsp. ground pepper Salad: 2 c. cooked rice 3 tomatoes, cubed 1 green pepper, diced 1 small onion, chopped 1/4 c. pimiento, diced 3/4 c. fresh mushrooms, diced Combine dressing ingredients in bowl or covered jar. Mix well and set aside. In large bowl combine all salad ingredients. Pour dressing over and mix gently. Chill several hours before serving.
