TOMATO-COTTAGE CHEESE SALAD 3 medium fresh tomatoes 12 oz. low-fat cottage cheese 1/2 c. grated carrot 1/2 c. diced cucumber 1/4 c. chopped green onion 5 small radishes, grated pinch of garlic powder (optional) 1 Tbsp. low calorie dressing lettuce leaves Cut tomatoes in half crosswise. Spoon out; drain pulp and seeds. Set aside tomato shells. In medium bowl combine drained tomato, pulp, cottage cheese, carrot, cucumber, onion, radishes, garlic powder (if desired) and dressing. Mix light- ly. Spoon into tomato shells. Arrange on lettuce leaves and serve. Makes 6 servings; 80 calories per serving or 1 low-fat meat and 1 vegetable exchange.
