MOCK SOUR CREAM

2 Tbsp. skim milk
1 Tbsp. lemon juice
1 c. low-fat cottage cheese
1/4 tsp. salt

Place all ingredients in a blender and mix on medium- 
high speed until smooth and creamy. Use a sour cream substi-
tute. This sauce may be added to hot dishes at the last
moment. Or serve it cold with the addition of flavoring or
herbs, as a dressing for salads or sauce for a mousse. Yields
1 1/2 cups. Approximately 160 calories per cup, 1 tablespoon
equals 10.
