6 medium boiled potatoes
1 small jar pimentos
1/8 lb. butter
1/2 pt. cream
4 heaping Tbsp. sugar
1/2 tsp. salt
2 heaping tsp. flour
1/2 tsp. dry mustard
1/2 c. water
1/2 c. vinegar
Dressing: Mix eggs, sugar and salt in top of double
boiler. Stir; add vinegar. In cup, make paste with flour,
mustard and water. Mix into first mixture; cook until thick.
Cool; add butter and cream.
Dice potatoes; add salt and pimentos. Toss in dressing.
Serves 4 to 6.
