RICE SALAD
(Six Treasure Rice Salad)
1/2 lb. fresh shrimp, cooked
and shelled
1/2 pkg. frozen pea pods
1/2 avocado, diced
1 c. cooked long grain rice
1 medium tomato, peeled,
seeded and chopped
1/2 green onion, cut in
1/2-inch pieces

Mix:
4 Tbsp. soy sauce
2 Tbsp. rice-wine vinegar
2 tsp. sesame oil
2 tsp. sherry
1/4 tsp. sugar
Combine shrimp, pea pods, avocado, rice, tomato and
green onion. Pour soy mixture over and toss. Serve warm or at
room temperature.
