1/2 c. lentils
2 c. chopped onions
2 tsp. salt
2 qt. water
1 c. spinach, chopped
2 Tbsp. olive oil
juice of 1/2 lemon
Wash lentils. Cook in salted water with the onion for
about 45 minutes. Or until lentils are tender. Add spinach,
olive oil and juice; cook only 10 minutes more. Yields 6
