POTATO SOUP

4 potatoes, peeled and diced
small
1 small onion, diced
1 carrot, peeled and diced
small
1 stalk celery, diced small
2 c. white sauce
2 c. warm milk
4 Tbsp. margarine
4 Tbsp. flour
salt and pepper to taste

Cook potatoes, onion, carrot and celery in salted water
(about 2 cups water). Cover while cooking; do not drain. Add
2 cups white sauce (melt margarine; stir in flour. Add to
warm milk and stir over medium heat until thickened). Mix
together and heat. Add pepper to taste.
