1 bunch spinach, washed and
1 c. mushrooms
1 tomato, chopped
1 c. grated Cheddar cheese
1/4 c. sunflower seeds
2 hard-boiled eggs, grated
2 Tbsp. vegetable oil
juice from 1 lemon
1 Tbsp. Dijon mustard
1 Tbsp. Parmesan cheese
1 tsp. sugar
1 tsp. Worcestershire sauce
1/2 tsp. salt
dash of pepper
Mix together and chill. Pour over salad and serve.
